I adapted this recipe to include Heirloom 18th Century French Mediterranean Bread Flour and puffed millet and baked it in a Pullman pan. However, because I omitted the salt, the dough rose too quickly and collapsed during baking.

You might notice that not all of the breads featured on the Bread Experience blog have the list of ingredients or the recipe posted. This is due to copyright issues. I belong to several baking groups and we’re baking through bread cookbooks. Part of our agreement to participate and blog about these breads is that we don’t post the recipes in consideration of the authors’ copyright.
Breads featured for the BBA Challenge, the Mellow Bakers and the HBinFive bakers don’t always include the recipes, just the process used to make them. However, if I change the ingredients or the recipe, I do post the adapted version. I appreciate your understanding.
