This is a very simple and delicious recipe for banana muffins. Chocolate chips and chopped walnuts are added to enhance the texture and flavor. From our family to yours — enjoy!
Banana Muffin Recipe
Ingredients:
2 eggs
1 cup sugar
1 1/2 cup mashed bananas
1/2 cup melted margarine
1 teaspoon vanilla
1 2/3 cup all-purpose flour
1/4 teaspoon baking powder
1 teaspoon baking soda
1/4 teaspoon salt
1 cup chocolate chips
1/2 cup chopped walnuts
Directions:
Preheat the oven to 375°F. Grease and flour a 12 cup muffin pan and set aside.
In a medium bowl, beat the eggs and sugar. Add the mashed bananas, melted margarine and vanilla and beat until combined. Add the flour, baking powder, baking soda, and salt and blend until moistened. Gently add the chocolate chips and chopped nuts. Bake in muffin pan for 20 minutes.
Yield: 12 small muffins or 6 large muffins.

I bought a bunch of small bananas for my grandson but he decided he wasnt in the mood for them. Now theyre nice and soft/black. I cant wait to try to make your banana muffins. Being disabled, its hard to stand let alone enjoy doing anything anymore… Sadly, im only 40. But im excited to give it a try. I can already smell it in the air and i wont be making them til tomorrow.
