Please enjoy this Citrus Pain au Levain roundup from the monthly bake for the Bread Baking Babes and Buddies.
The bread of the month for the Bread Baking Babes for June was Citrus Pain au Levain with Herbs and Seeds, a naturally leavened bread, and one of my favorites.
I was the host kitchen and I only laid out a few ground rules for making this bread.
- Use at least 30% of some type of whole wheat flour
- Include some citrus flavoring of your choice – orange, lemon, lime, other
- Also include some seeds, herbs or both
I must say, everyone played along very nicely.
It’s always a delight to see how the other bakers interpret the bread and make it their own.
The Breads the Buddies’ Made
Our new baking buddies baked up a storm this month. Thank you, Shirley, Bonnie, Maree, and Chandini for baking along with us.
Shirley of Ever Open Sauce made two versions of the Citrus Pain au Levain. One loaf was made with semolina and kamut as the base flours, together with black and white sesame seeds and fennel seeds. That sounds good to me! Too bad she wasn’t happy with the results. She made the second loaf with lemon, poppy seeds, and sesame seeds. It sounds like a very seedy proposition! And delicious!
Bonnie made her Citrus Pain au Levain with caraway seeds, citrus, and thyme. Great idea to use caraway seeds! Just look at that oven spring and what a nice crumb!
Maree went all out this month and made several versions. Her first bread was made with chopped rosemary from her garden, fennel seeds, and the zest of a large lemon. Nice scoring and what a beautiful crumb!
For her second take on this bread, Maree added olives and preserved lemons. Love the idea of using preserved lemons. This one had a lovely crumb as well!
For her third bake, Maree added orange zest, toasted walnuts, diced fresh Granny Smith apples, and the flowers from four sprigs of organic lavender from my garden for the herbs. Another lovely crumb especially since her dough was wet to work with.
Chandini made her version with lemon, thyme & fennel seeds which is always a great combination in my book! What beautiful scoring and such lovely photos!
