An easy cornbread recipe that can be enjoyed at any meal of the day. For greater richness, add 2/3 cup of cheddar cheese to the batter as well as sprinkling cheese on top.
Easy Broccoli Cornbread
Ingredients:
1 1/3 cups cornmeal
1 cup all-purpose flour
1 1/2 tsp baking powder
1/2 tsp baking soda
2 tsp sugar
1 lg egg
1 lg egg white
1 cup lowfat milk
2 tbsp vegetable oil
3/4 tsp salt
1 2/3 cups diced yellow onion
2 cups diced broccoli tops
1/2 cup shredded cheddar cheese (optional)
Directions:
Preheat oven to 375 degrees.
Lightly coat a 2-quart baking dish with oil.
In a large mixing bowl, combine dry ingredients and make a well.
In a medium bowl, whisk eggs until foamy; add milk, oil and salt, then whisk until blended.
Pour egg mixture into dry ingredients and stir to combine.
Fold in diced onion and broccoli; distribute evenly in batter.
Spoon mixture into oiled baking dish and top with cheese.
Reduce oven to 350 degrees and bake 40-45 min.
Note:
To increase the veggies in this recipe, add one more egg white and increase the diced onions to 2 1/3 cups, diced broccoli to 3 cups. Or create a cornbread casserole by including 1 1/2 cups diced portabella mushrooms with the extra veggies and topping with shredded cheese.
