Fall has always been one of my favorite seasons. The cool, crisp, breathable air is a welcome relief from the heat and humidity we experience during the dog days of Summer.
Summer has its benefits, mind you, but it’s always a pleasure to move out of the heat and transition to beautiful clear skies, dropping temperatures, and falling leaves. It’s also a great time to get back in the not-so-hot kitchen and bake.
Baking is one of my favorite pastimes, and one of my favorite ingredients to bake with during this season is pumpkin.
What is it about pumpkins?
Pumpkins belong to the squash family. They are typically treated like vegetables, but in actuality, they are fruit. Who knew?
They are so versatile. I love their color, shape, and the fact that they grow on vines. I’ve grown pumpkins before, and the vines took over my yard, but it was pretty cool watching them grow.
I’ve used pumpkins in soups, in cookies, roasted with root vegetables, and carved them for Halloween. However, I think my favorite way to enjoy them is in pumpkin bread.
I’ve made many different types of pumpkin breads over the years so I decided to round them up and showcase them together. The list continues to grow as I discover more creative and delicious ways to incorporate pumpkin into breads.
Favorite Pumpkin Breads by Category
I invite you to enjoy some of my favorite pumpkin breads by category: bagels, pizza, quick bread, rolls, scones, sourdough, sweet bread, and yeast bread.
Bagels
Pumpkin Spelt Bagels with Kefir Milk
These Kefir Milk Pumpkin Spelt Bagels represent a mashup of two ideas – Pumpkin Bagels and utilizing kefir milk as a fermentation method, instead of just providing hydration and flavor.
Pizza
This Pumpkin Spelt Pizza is topped with mozzarella pearls, spinach, garlic, and crushed red pepper.
Quick Bread
This pumpkin gingerbread is quick, easy, and delicious! It makes a great addition to this list and your Fall table.
Einkorn Olive Oil Pumpkin Bread
The olive oil adds healthy fat and antioxidants to this quick bread, but I chose to make it even healthier and tastier by using Einkorn flour instead of regular all-purpose flour.
Rolls
You’ll like these crescent rolls even if you’re not a fan of pumpkin bread. My sons would never have known there was pumpkin in the rolls if I hadn’t told them. They thought there was cinnamon in them. My oldest son loves cinnamon so that’s a good thing.
Pumpkin Yeast Rolls
These Pumpkin Yeast Rolls can be shaped in a variety of shapes. I formed some of the rolls into single knots, some as crescent rolls, and some as butterfly rolls.
There is also a photo tutorial of the process so you can learn how to shape these rolls as well.
Heritage Wheat Sourdough Pumpkin Crescent Rolls
Lightly spiced, leavened with a wild yeast sourdough starter, and features two types of hand-milled whole wheat flour from heritage grains. These delightful rolls are a spin-off of one of my family’s favorite Holiday roll recipes.
Scones
These Pumpkin ‘N Spice Spelt Scones, made with whole grain spelt, will satisfy your sweet tooth. You can serve them with butter, jam or jelly and a pot of tea or a glass of milk.
Sourdough
Rustic Sourdough Pumpkin-Shaped Bread
Imbued with the flavors of Autumn, this festive loaf has a rustic charm reminiscent of heirloom pumpkins. It would make a lovely centerpiece for Fall or Holiday gatherings.
Stout, Rye & Pumpkin Sourdough
When you think of beer bread, if the image of a quick bread made with soda is what comes to mind, then I challenge you to get out of your comfort zone and try this bread. This Stout, Rye and Pumpkin Sourdough is not your average loaf made with beer, and this is a good thing, in my opinion.
Einkorn Pumpkin Stout Sourdough with Seeds
Einkorn Pumpkin Stout Sourdough with Seeds is a remake of an old favorite (the one listed above). This version is made with all-purpose Einkorn flour, rye, pumpkin puree, stout, and toasted pumpkin seeds for added appeal. This bread is not sweet; it’s chewy and somewhat nutty due to the Einkorn. The pumpkin seeds provide added crunch and the sourdough gives it great keeping qualities.
Sweet Breads
Pumpkin bread is the ultimate comfort food for Fall and when you combine that with a buttery smooth brioche, you have a deliciously awesome treat.
Pumpkin Spice Chocolate Babka
Enjoy the flavors of Fall with this Pumpkin Spice Chocolate Babka…seasoned with pumpkin and spices and rolled with love, chocolate love, that is. I just love this time of year and baking with seasonal favorites like pumpkin, apples, and spices galore.
KAMUT Sourdough Pumpkin Pullapart Bread
This Sourdough Pumpkin Pull Apart Bread, made with KAMUT white and sprouted wheat flour, is laced with Fall flavors and filled with a gooey cinnamon and brown sugar paste.
Yeast Breads
This is a wonderful bread for Fall. It has a tight crumb and makes a great sandwich. It tastes good on its own, but it also tastes great with butter, or as a grilled cheese sandwich or cinnamon toast.
Pumpkin Cornmeal Einkorn Rye Bread
This Pumpkin Cornmeal Einkorn Rye Bread with kefir milk is moist, slightly sweet, and nutty due to the inclusion of einkorn and cornmeal. Baking it in a La Cloche produces a crusty exterior with a soft crumb. The first bite has just a hint of pumpkin pie spice.
Pumpkin Yeast Bread
These twin loaves from different flours began with the same list of ingredients but took on a different life when the flour was added. One loaf was made with all-purpose white flour; while the other loaf was made with the ancient grain Einkorn.
In case you can’t get enough of these breads, here is a slideshow of some of them.
I hope you enjoy this roundup of some of my favorite Fall pumpkin breads.
Happy Fall Baking!
Cathy
