I accidentally created a wonderful recipe for making an olive and herb flatbread. I was really trying to make Naan bread using my Amish Friendship bread starter but the result turned into a flatbread because the dough didn’t rise.
Note to self: make mistakes like this more often! We love the sweet flavor and chewy texture of this bread, as well as the flavor of the seasonings spread on top.
Flatbread Made with Amish Friendship Bread Starter
Ingredients:
1 cup Amish Friendship bread starter
3 tablespoons milk
1 egg, beaten
2 teaspoons salt
4 1/2 cups bread flour
Olive oil
Sea Salt
Parmesan cheese, grated
Oregano
Directions:
Put starter in large bowl and stir in sugar, milk, egg, salt, and enough flour to make a soft dough.
Knead for 6 to 8 minutes on a lightly floured surface, or until smooth. Let rest 10 minutes.
Spread dough onto oiled 9×12 jelly roll pan. Brush olive oil over top of dough, then sprinkle sea salt, grated Parmesan cheese, and oregano over top of bread.
Bake at 375 degrees for 20-25 minutes until lightly brown.

The instructions say to add sugar but that isn’t listed in the ingredients. It also calls for 4.5 cups of flour but I couldn’t get more than 1 cup and my dough was already stiff.

This bread was submitted by a reader. I haven’t tried it, but the ratio of flour to liquids (listed in the ingredients) does seem a bit off. Perhaps the Amish friendship bread starter she used is more liquid than stiff. I would go with 1-2 cups of flour.
Amish friendship starters already include sugar so I’m not sure if any extra is needed in the dough, but you can always add 1/2 tsp and see if you like the taste.
