A hoe cake is a type of thin cornbread made of cornmeal, salt, and water and is baked on a griddle. Field hands often cooked this these cakes on a shovel or hoe held to an open flame. It is also referred to as Johnny-cake, Shawnee Cake or ash cake.

Hoe Cake Recipe
Ingredients:
3 cups cornmeal (plain)
1 teaspoon salt
pinch of soda
hot water
Directions:
Put corn meal and salt in bowl and mix well. Moisten with hot water until dough can be handled. Let stand an hour.
Shape by spoonfuls into flat cakes. Fry on hot greased griddle or skillet until golden brown.
