This is one of Mona’s special recipes for good health. Mona prefers this over Greek-style non-fat plain yogurt (strained yogurt), but sometimes serves it with roast turkey or lean pork roast.
This preserve tastes great with elderberry concentrate (about 1 tbsp per cup of preserve) or with Grand Marnier liqueur (about 2 tsp per cup of preserve), with either addition mixed in at serving time.
Monas Mashed Berry Preserve
Ingredients:
2 cups fresh water
1 6-oz pkg dried, sweetened cranberries
3 cups frozen dark cherries, halved
3 cups frozen blueberries
1/3 cup all-fruit juice concentrate *
2 1/2 teaspoons Pomona fruit pectin
2 1/2 teaspoons Pomona calcium water **
* Pomegranate/Grape/Blueberry or other flavors.
** Refer to instructions in package.
Directions:
1. In a large sauce pan, bring water to a soft boil; reduce heat to low.
2. Add dried cranberries and allow to simmer a few minutes.
3. Add fruit juice concentrate, cherries and blueberries; mix well and allow to simmer.
4. When mixture begins to simmer, mash gently to squash blueberries.
5. Sprinkle pectin evenly over fruit mixture, stirring while pectin is slowly added. Continue stirring gently until all pectin is dissolved.
6. Add calcium water to fruit mixture; stir well to combine.
7. Bring fruit mixture to a soft boil, stirring frequently.
8. Turn off heat, remove pan from stove and allow to cool completely.
9. Spoon preserve into jars and refrigerate overnight.
10. Serve over plain yogurt, or on toast, muffins or pancakes.
Notes:
Skip Step 4 if more whole fruit is desired.
This recipe makes about 5 cups of preserve.
