I lost my taste for shop-brought bread a few years ago (too many additives, not enough texture/flavour etc) so I decided to make my own. I experimented a bit and came up with this Organic Spelt Bread with Flax and Sesame Seeds.
Ingredients:
- 450g/16oz Organic Stoneground Spelt Flour
- 10g/1/2 oz Instant Yeast
- 4 teaspoons Organic Honey
- 1 teaspoon Sea Salt
- 100g/3 1/2 oz Flax & Sesame Seeds
- 275ml warm water
- 4 teaspoons Olive Oil
- 75g/2 1/2 fluid oz Live Yoghurt
Directions:
Mix dry ingredients in a large bowl, make a well in the centre, add the rest of the ingredients and combine.
Cover bowl with cling film and place in a warm area until dough doubles in size (about 1 hour).
Remove dough from bowl & gently knock back (flatten) on floured surface, knead for about 15 minutes, until it is no longer sticky.
Set oven to 220 Celsius. Form dough into a regular shape (ball or oval), sprinkle with organic rolled oats, place on oiled baking tray, cover (I use a large mixing bowl) and leave somewhere warm for half an hour.
Remove the cover and you should now have a good-sized loaf.
Slice across the top of the dough with a sharp knife to prevent the loaf from splitting and place in oven.
Reduce oven temperature to 190 Celsius and cook loaf for half an hour – if it sounds hollow when you tap it, it’s done.
